Black eyed chick peas are called Karamani in Tamil and Lobia in Hindi. This is a legume, which is high in protein. Making this sundal is so easy, it does not require over night soaking. Just 2-3 hours in hot water will do.
Today, I made it like a salad. For a change, I skipped coconut.

Ingredients
White Karamani - 3/4 cup, soaked in hot water for 3 hours
Salt to taste
Mango - 1/2 cup, finely chopped
Carrot - 1/2 cup, grated

To Season
Cooking oil - 2 tsps
Hing powder - 1/2 tsp
Mustard seeds - 1 tsp
Jeera - 3/4 tsp
Green chillies - 4, chopped fine
Red chillies - 3, broken
Curry leaves
Lemon juice - 3 tsps

Yields 10 cups of Sundal

                                                                   Cooked Karamani added, after cooling down. Otherwise, there is a possibility of the Karamani getting mushy.

Mixed well


Now, mango pieces and grated carrots added. Switched off, and gently stirred. Add Lemon juice too.






Notes
*If you want, can add 2 tsps of grated coconut.
*Lemon juice can also be adjusted to your taste
