We always think, if we don't add onions and garlic, the subzi might lack flavour. But, it was unbelievably tasty and flavourful, when suddenly I decided to make a very saatvik, no onion -no garlic side dish, with whatever vegetables I had. Even on a festival day or a vrat day, we can have this. Nothing is lacking in this. After making this dish, you wonder, how  this subzi can have so much taste  and aroma without onions and garlic!!!



Ingredients
Potatoes  - 2
Carrot - 1, mid sized
Red bell pepper - 1
Green bell pepper - 1
Cubed paneer pieces - 1/4 cup
Chilli powder - 1 tsp
Coriander powder - 1 tsp
Jeera powder - 1 tsp
Kasoori methi leaves - 1 tsp
Chpped coriander leaves - handful
Besan flour - 1 tsp, diluted in some water
Salt to taste

For seasoning
Cooking oil - 2 tsps
Ghee - 1 tsp
Turmeric powder - 1 tsp
Jeera - 1 tsp

Serves 3

In the pressure pan, add cooking oil and ghee, season turmeric powder and jeera.


Then add the bell peppers


Now add the potatoes and carrots, and also the chilli, coriander, jeera powders, crushed kasoori methi and salt to taste


Add the paneer pieces ,  the diluted besan flour, and also the ...


chopped coriander leaves. Cover the lid and cook for 3 whistles.




Serve hot with rotis or Triangle parathas..
