Barley, a cereal, which is not used in many households, is so rich in dietary fiber, and also protects  the intestines. People should consciously start using barley in all soups, it provides not only a nutty flavour but also a nice body  and texture to the soup. Masoor dhal, a lentil, small pink ones, are rich in proteins. So, this soup,  has a unique combination of these rich cereal and pulse, which are  generally lacking in vegetarian diet. This is a Vegan soup too!! No Dairy product has been used here in this recipe!
This recipe has been adapted and modified from Tarla Dalal's recipe. I have added some more vegetables to it and some extra seasonings.  From my young age, I have been a big fan of Tarla Dalal. Those days, when there was no internet, no google search, Tarla Dalal's books came very handy, and how many north indian, chinese and continental recipes I would have tried from hers!!! Not once has her recipe flopped.....Truly an amazing lady, who has contributed to this society such infallible recipes!!!!!

Ingredients
   Barley - 2 tbsps    
Masoor dhal - 2 tbsps
Garlic - 1 tsp, finely chopped
Spring Onions / Scallions - 3/4 cup
Yellow squash - 1/2 cup, chopped
Carrots - 1/2 cup, chopped
Fresh beans - 1/2 cup, chopped
Fresh peas - 1/4 cup
Tomato - 1/4 cup, chopped
Olive oil - 2 tsps
Italian Seasonings - 2 tsps
Pepper powder - 2 tsps
Salt to taste

Prep time: 15mts; Cooking time: 10 mts

Yields 5-6 bowls

All vegetables cleaned, cut and kept ready


Barley and Masoor dhal soaked in hot water for 2-3 hours



                              In a pressure pan, add Olive oil, add garlic and Spring onions.

Then add the tomatoes and keep sauteeing


Add all the vegetables


Now add the barley and masoor dhal with the water they are soaked in, plus, the Italian seasonings  and salt


Add some more water till the vegetables are immersed.


Cook for 3 whistles.



                                                To the cooked soup, add pepper powder

Soup is ready!! Serve it hot with garlic toasts (recipe to follow) or any bread of your choice.
