Spinach is practically the equivalent of a multivitamin, with a 40-calorie serving packing an absurd amount of Vitamin K,Vitamin C and Vitamin E, Manganese, Folate, Iron, and Fiber. This leafy plant is also full of protein, B Vitamins, Calcium and Omega-3 fatty acids.
This great spinach is added to the protein rich Urad dhal, and these simple vadas / fritters are made. they are crunchy, crisp, and nutrition augmented with the rich spinach.

Ingredients
Urad dhal, washed and soaked for 2 hours - 2 cups
Tightly packed spinach leaves - 2 cups
Green chillies - 6
Ginger - a small piece
Hing / asafoetida powder - 1/2 tsp
Salt to taste
Oil to fry the vadas

Prep time: Soaking - 2 hrs; others - 10 mts; Grinding: 25 mts; Cooking time: 30 mts

Yields 24 Vadas

the well ground fluffybatter, urad dhal soaked for 2 hours, drained completely, and with minimum water possible....ofcourse, with asafoetida powder, green chillies, ginger and salt. Add salt finally after the batter is ground to a fluffy texture.  The batter can be ground in a blender or grinder according to your convenience. Grinder suits me the best.

Serve these crisp vadas with any chutney of your choice. Picture below shows vadas, coconut chutney and beet root halwa (recipe to follow) served for high tea

  5. These vadas enriched with spinach suits the background greenery to the T. Perfect outdoor snack to sit and relax amid the picturesque backdrop with a hot cup of steamy coffee!! Yum!! Dreamy enough!
