BLACK BEANS..........is a strong contender in phytonutrient benefits. Recent studies reveal, black beans provide special support to for digestive tract health, and that too, particularly, colon.The protein-plus-fiber combo in black beans prevents type 2 diabetes. Lowers cholesterol levels, provides cardio vascular benefits, is anti oxidant and anti inflammatory, and we bought dry black beans, soaked them overnight and pressure cooked them.
Here is yet another signature recipe of my daughter, who takes great care of everyone's health, by making healthy dishes.
And we all know very well, all white things , mostly, are bad for health, and black always is healthy.
Here are the extremely tasty and healthy Black bean patties, served with Corn Salsa and Sour Cream.
And...and...the plate on which the patties are served...has been baked and painted by my grand daughter!!



Ingredients
Black beans - 3 cups, soaked over night and pressure cooked for 8 whistles
Onions - 1, chopped fine
Red bell pepper - 1, chopped fine
Green chillies - 5-6, chopped fine
Salt to taste
Bread crumbs - 2 cups
Green tabasco sauce - 3 tsps
Red tabasco sauce - 3 tsps
Tortilla chips - 2 cups
Jeera powder - 1 tsp
Coriander powder - 1 tsp
Hot tomato salsa - 1 cup (Mix chopped tomatoes, green chillies, cilantro leaves, lemon juice and salt to taste)
Oil - to make the patties, as required.

Place the pressure cooked black beans in a wide bowl, the tomato salsa, chopped onions, red bell peppers, green chillies and coriander leaves added. Salt to taste also added

Bread crumbs added, both the tabasco sauces added, then the whole thing mixed , rather kneaded well, taking care to mash up the black beans.

The tortilla chips, along with jeera and coriander powders pulsed in the blender to a coarse powder

The black beans mixture, shaped into patties........

The tortilla chips powder , spread on a plate, then the patties are gently rolled over the chips powder, taking care to coat the full patties with the chips powder


Then neatly arranged on a plate. If you are not making them at once, then tightly cling wrap them, and carefully place inside the refrigerator.


Sprinkle some oil over a nonstick pan, heat it nicely, lest the patties will disintegrate. The oil should become really hot, gently place the patties over the pan, and when the bottom side becomes crunchy and brown in color, gently flip over to the other side, and repeat the process.

Notes

* I am not sure, whether these Black beans are available in India. Otherwise, we can use the Rajma and black eyed chick peas to make this.
*Tortilla chips are nowadays available in India. If not available, you can probably, powder rusk or some crunchy thing with the spice powder and use for coating the patties.
*Always, protein rich diets are a problem with the total vegetarians, and so, this dish is a must for all growing children.
*These patties can be ideally used for burgers. You can warm and place a lettuce leaf on a burger bun, then a patty, then a slice of tomato, a slice of cheese, drizzle some hot and spicy sauce over it,also some vegan mayonnaise,  then close it with another bun...isn't it a great lunch box idea for growing kids???
