Apples always walk away with most of the health accolades, some quotes saying "An apple a day keeps the doctor away", and when compared to so many other vegetables which are called the healthy ones in many ways, the praises of Celery remain unsung sadly. Many do not know its priceless values. But the list is endless, and it is incredible. I am sure, after going through this post, you will also  join the list of "Celery lovers".
A celery stalk contains just 10 calories, so, it is highly beneficial for weight-watchers, celery reduces inflammation, is a great stress-reliever, and hence, if you eat a celery based dish in the evening, it produces good sleep. Celery protects body's alkaline balance, helps good digestion, contains good sodium, just a stalk of celery contains your daily need of Vitamin A, thus protects your eyes, lowers blood pressure, bad cholesterol, and last but not the least, celery can combat the most dreaded cancer.

Ingredients
Celery - 1 bunch, washed well and chopped
Green chillies - 3
Ginger - a small piece
Whole wheat flour - 3 cups
Salt to taste
Kasuri methi (dried fenugreek leaves) - 3 tsps
Ajwain / carom seeds - 2 tsps
Ghee and oil - 3 tsps
Ghee and oil to cook the parathas

Prep time: 15 mts; Cooking time: 30 mts

Yields 25 parathas


Celery pieces along with ginger and green chillies blended into a smooth puree

To the puree, wheat flour, kasuri methi, salt, ajwain, ghee + oil added and..


kneaded to a soft dough, and left aside for minimum an hour


Roll into soft, thin chapathis


First dry cook on a non stick tava, flip over, then drizzle a drop of oil and cook both sides evenly


Stacked on a plate

Notes
* An interesting variation will be to replace the kasuri methi with fresh cilantro/coriander leaves, roughly a handful. I made the next time like this, and this combo was also very tasty.
