Avocado is rich in mono saturated fats, due to which its texture is creamy and smooth. It reduces the risk of cardio vascular diseases, contains very small amounts of carbs, lot of fiber content, is packed with vitamins and minerals, high in antioxidants, aids in weight loss, reduces symptoms of arthritis, contains lot more potassium than a banana, lowers cholesterol and causes general health improvements.
This has been so beautifully incorporated with Farfalle pasta by my d-i-l, along with some other vegetables, and it turned out to be an awesome pasta. You can call this a salad too, not much of cooking was involved.


Ingredients
Farfalle pasta(whole wheat) - 3 cups, cooked in water and drained
Red bell pepper - 1
Yellow bell pepper - 1
Orange bell pepper - 1
Spring onions - a few 
Red kidney beans - 1 1/2 cups, soaked and cooked/1 can
Salt to taste

To grind to a smooth paste
Avocados - 2
Jalapeno peppers - 2
Lemon - 1(extract juice)
Cilantro - a handful
2-3 stalks of spring onion

Prep time: 15 mts; Cooking time: 12 minutes to cook pasta

Serves 6


All vegetables getting washed well

Colored peppers cut thinly and placed in a bowl


Cooked and drained pasta


Red kidney beans added to the sliced peppers


All the above mentioned ingredients to be ground, loaded in the blender jar


Avocado flesh also scooped out, added, and all blended to a smooth puree


Blended paste added


Drained pasta also added, check and add some salt.


Mix well


Garnish with some Spring onion greens


Isn't it a very healthy Pasta, with no oil and no cheese???


Serve this nutritious pasta or salad, however you may call , with some baked Sweet potato fries, seasoned with some chilli powder and salt. D-i-l seasoned with some Cajun seasonings. You can add pepper powder too.

Notes
* Any variety of pasta can be used for this dish.
*Any kind of beans can also be used.
*Green bell pepper can also be added.
