Healthy eating comes with these delicious Mexican burritos.......corn tortillas packed with kidney beans, cheese mix,  the very healthy guacamole called "guac", and some sensational salsas....yea..yea...your guess is right......recipe and cooking  by my dear daughter......
This has been made from scratch, is absolutely perfect for any kind of party or to entertain guests.....these burritos have  a melange of flavors....they have everything, that too, fresh...they have spanish rice, protein loaded black beans, and veggies......it is so easy to serve them..keep everything ready, keep the tortillas, the guests can fill them up according to their wishes, and wrap and devour...

Can be served as a naked burrito like this too...without the tortilla.....a real blast of colors, right???



Ingredients
Corn tortillas - 10
Guacamole - 2 cups
Canned black beans - 2 cups
Spanish rice - 3 cups
Corn salsa - 2 cups
Tomato salsa - 2 cups
Sour cream - 1 small cup
Fresh lettuce leaves, chopped - 3 cups

Yields 10 Veggie burritos

All the things that comprise a burrito...canned black beans, guacamole, corn salsa, tomato salsa, lettuce leaves and spanish rice


Guacamole...In a bowl, mix together 2 avocadoes, peeled and pitted, lemon juice - 3 tbsps, 1 tsp salt, 1/2 cup diced onions, 3 tbsps fresh cilantro/coriander leaves, 2 tomatoes diced fine, 1 tsp minced garlic, 1 pinch red chilli flakes

Now comes the assembling: On a clean surface, place a corn tortilla


Keep in the center, 2 tbsps of spanish rice


then black beans and then guacamole


Now the tomato corn salsa (chopped tomatoes, onions, coriander leaves / cilantro, chopped green chillies and fresh lemon juice, salt to taste, all mixed well)


Now, some corn salsa


A dollop of sour cream


Now, some chopped lettuce leaves


Fold the burrito, bottom first, sides next, then slowly start rolling firmly, always taking care to to keep the rolled portion tucked in

 You can wrap it up in an aluminium foil and serve...




or serve as it is

Notes
*Whole wheat tortillas (our indian chapathis) can also be used in the place of corn tortillas.
*Rest of the ingredients are easily available in Indian market.
