This is an amazingly interesting, colorful salad, comprising of fruits ,veggies, and legume. It is uncalled for  to tell you all, how healthy this Salad is......
Black eyed chick peas , which are fiber-rich, Raw mangoes which lower cholesterol, Red bell peppers  which have the highest amount of Vitamin C, Green bell peppers , which are low in calories but a good supply of Vitamins and Minerals, Tomatoes,  which are nutrient-dense super food, Mint leaves,  stomach-soother, palate-cleanser and great appetizer,  Musk melons, which are rich in Potassium and regulate blood pressure, Ripe mangoes, which protect us from many kinds of cancer and Pomegranate, which helps us regain our strength after any illness and is a great cure for heart related diseases..............
WOW!!!! All these in just a simple papad bowl............the bowl also is edible.....like the softy ice cream in an edible cone, it gives us a thrill to eat the papad bowl too.....so, what is preventing you from rushing to your kitchen??? Start making this healthy salad and improve the immunity of your family members......
I saw in a TV show,  the "Wonder Chef" Sanjeev Kapoor serving a  salad like this. Salad ingredients were different, but served in papad bowl. Wanted to give it a try. Of course, to be honest, I wasted 5-6 papads, while shaping them up. They had become either too crunchy & stiff or  I didn't have the dexterity  to tuck them in.....

Ingredients
Black eyed chick peas (Karamani) - 1 cup (soaked for 3 hours,  and cooked for 5 whistles and let aside to cool)
Raw mango - 1/2 cup, chopped
Red bell pepper - 1/2, chopped
Green bell pepper - 1/2, chopped
Tomato - 1, chopped
Musk melon - 1/2 cup, chopped
Pepper powder - 1 tsp
Salt to taste
Olive oil - 2 tbsps
Lemon juice - 1 tbsp
Mint leaves - 1/4 cup, chopped
Green chillies - 3-4, slit
Masala  papads - 4
Fresh mangoes - chopped, for garnishing
Pomegranate arils for garnishing

Prep time: 15 mts; Cooking time: nil

Yields 4 bowls of salad

The cooked and cooled black eyed chick peas put in a bowl.


Chopped raw mangoes, red and green bell peppers and tomato pieces added


Melon pieces added


Salt, pepper and olive oil added


Lemon juice now


All mixed well


Mint leaves are being added now


Green chillies tossed in now, and refrigerated.


These papad bowls can be made 2 hours ahead and stored in an airtight box. Toast the papad over fire, and while it is moist, before it becomes stiff.....


gently tuck it inside a bowl like a flower. You can use any shaped bowl. Just make sure, the papad is slightly bigger than the bowl, so that it can conveniently be tucked in.


Papad bowls made, let aside to cool down for 5 minutes and then stored.


At the time of serving, keep a bowl, fill it with the chilled salad, sprinkle some fresh mango pieces, and garnish some pomegranate arils, and keep a sprig of mint leaf, serve immediately.


You can simultaneously keep 2-3 bowls, fill them. Enjoy this delicious, colorful, health-loaded, protein rich salad!!!

Notes
* Garbanzo beans (kabuli channa) or any other kind of legume can be used.
*Similarly, veggies are fruits are our choice.
*Cucumbers become watery, that's why it's better to omit them.
*You can change the dressing too. But do not use anything which will make the salad watery, lest the bowls will get soggy soon.
