The Orange colored Sweet potatoes may be nature's unsurpassed sources of beta carotene. This also raises Vitamin A in our blood level, is full of anti oxidant nutrients,anti inflammatory, improves blood sugar regulation, good source of B 6 Vitamins, good for blood vessels and arteries, controls blood sugar, fat free, contain magnesium which is best for de-stressing,encourage healthy, glowing skin, and prevent cancer.
Here is a recipe of my daughter, making this an interesting curry, camouflaging its sweetness with some spices, and it turns out to be an excellent side for rotis as well as rice.

Ingredients
Sweet potatoes - 6-8, washed &  scrubbed well
Onion - 1, chopped fine
Green chillies - 2-3, chopped fineGinger paste - 1 tsp or grated ginger - 1 tsp
Chilli powder - 2 tspsSalt to taste


To Season
Cooking oil - 3 tbsps 
Turmeric powder - 3/4 tsp
Hing/ asafoetida powder - 3/4 tsp
Mustard seeds - 1 1/2 tsps
Curry leaves handful

Serves 6

Sweet potatoes washed, scrubbed and allowed to rest in water for a while

To lay stress on the fact that this curry is good for heart, the chopped onions have been shaped like a heart, and chopped chillies are there too


Boiled in a pan, till soft, and peeled. You can pressure cook too. Let it cool down, then cube them. Let the pieces be chunky and slightly big.


Abroad non stick pan heated up, oil added and all the above mentioned seasonings added and onions and green chillies added and sauteed well


Turmeric powder and ginger paste added


Now add the cubed sweet potatoes


Add chilli powder


Flames on the lowest, let it become well roasted. While stirring, do it gently, so that the sweet potato pieces will not turn out to be mushy.
