"Aam" in Hindi means "Mangoes" and "Ras" is juice, puree....... don't  ever think of Aam Aadmi party now. (In the second  context, "Aam" means, "ordinary")...think of the special,  juicy, fresh, flavorful Alphonso mangoes , rich in orange colour, and proceed to read the recipe.....not only read...also make and enjoy......not only enjoy...but also share your  comments with  me!!!
 You can call this a healthy dip, since I have used Organic Cane sugar for this recipe. It is easily available in the market now, is very very good and has lot of health benefits.
This can be called a dip to be precise, since it is a great dip for poories and chapathies. When you dip the hot poori in the cold Aam Ras, and put inside your mouth.........whoa...whoa...whoa..............it is just heavenly!!!


Ingredients
Alphonso mangoes - 4, chopped
Oraganic cane sugar - 10 tsps (for your satisfaction, if you want, add 2 tsps of white sugar)
Cardamom powder - 1/2 tsp
Saffron strands soaked in 2 tsps warm milk

Yields 4 small bowls of Aam Ras

Saffron strands soaked in milk and the beautiful alphonso mangoes...I already chopped one and put it inside the blender jar, then only remembered to click this picture...that's why only 3 are there.


Chopped mango pieces with cane sugar and cardamom powder


Saffron strands added, it is okay if you add that 2 tsps of milk too.


Blended to a smooth puree.



Serve the chilled Aam Ras with the hot poories, and masal on sides, and enjoy!!! I have, earlier mentioned poori-masal as the Inseparable Combo. In the mango-season, this Aam Ras also joins as a  third combo partner !!!

Notes
*When mangoes are not in season, tinned mango puree can be used. If it is an already sweetened puree, watch out the addition of extra sugar..
