 Bored of eating Paneer Tikkas?

Here's a way to eat the Paneer tikkas,  but with a twist!

Healthy, not fried, no unnecessary oil, and baked....




Ingredients
Bread, brown or white as per your choice - 8 slices
Cubed paneer slices - 11/2 cups (home made paneer)
Hung curd - 1 cup
Kitchen King Masala - 11/2 tsps
Kasoori methi - 2 tsps
Tomato - 1, grated
Chopped mint leaves - a handful
Chopped cilantro/coriander - a handful
Red bell pepper - 1/2, chopped
Green bell pepper - 1/2, chopped
Green chutney - as required (with onion - refer here; without onion refer here)
Red chilli flakes
Grated cheese, as required
salt to taste

Recipe cuisine: Indian; Category: Breakfast/lunch/dinner
Prep time: 30 mts; Baking time: 5-10 mts

Yields 8 toasts


 In a bowl, take the hung curd, add kitchen king masala and kasoori methi, and salt to taste


Now the grated tomato


Now the chopped mint and cilantro leaves


Mix well


add the paneer cubes


The colored bell peppers


Mix well, let the paneer and bell peppers marinate for minimum 30 minutes. You can leave it inside the fridge also, to prevent hung curd from turning sour. Then 20 minutes before making, take it out


Line the baking tray with aluminum foil, spray some Olive oil, arrange 4 bread slices and spread green chutney on top


Spread the paneer mixture on top

Sprinkle some red chilli flakes


Top with some grated cheese


Pre heat the Oven at 200 degrees Celsius for 10 minutes, then slide the baking tray into it, and bake till the cheese melts


Done to perfection!!


Serve with any soup. Seen here is Sweet potato soup.



Notes
Since green chutney is there, I just added Kitchen king masala. Any spice powder is optional. But this itself, trust me, had superb taste.

A very easy matar paneer recipe with home made paneer!!

A quick recipe too...creamy without any unnecessary fresh cream and butter!! An one pot Pressure cooker recipe!!

My other side dishes for rotis




Ingredients
Fresh peas - 11/2 cups
Fresh paneer - 11/2 cups(can be home made or store bought), cubed
Onion - 1, chopped
Green chillies - 1,  chopped
Ginger - a small piece, chopped
Garlic - 2-3 pods, chopped
Tomatoes - 2, chopped
Cashews , soaked for 1/2 hour - 10 - 15
Salt to taste
Chilli powder - 1 tsp
Dhania and Jeera powders - 1 tsp each
Kasoori methi - 2 tsps
Garam masala powder - 3/4 tp

To season
Cooking oil - 2-3 tbsps
Turmeric powder - 1/2 tsp
Jeera/cumin seeds - 1 tsp

Recipe cuisine: North Indian; Category: Lunch/dinner/sides
Prep time: 10 mts; Cooking time: 20 mts

Serves 2-3


In the pressure pan, heat cooking oil, add ginger, garlic, green chilli and onions and saute till onions become translucent


Add tomatoes too


After the tomatoes become mushy, add soaked cashews


after the sauteed mixture cools down, load into blender jar


and grind to a smooth paste


Now, heat the pressure pan again with oil, and add seasonings


Now, keep the flames on the lowest, add the ground paste, and add chilli, dhania, jeera and garam masala powders along with kasoori methi


add the fresh peas, salt to taste, and cook for 2 whistles


After the pressure releases naturally, this is how it looks


Now, add the fresh paneer cubes, mix well and simmer for 3-4 minutes so that the paneer cubes will take in all spices


Serve hot with rotis

 Pudina Paneer Parathas!!!!

Health, taste and nutrition...all packed into these!!!

MINT aids digestion, treats Asthma, treats common cold, Cures Head ache, a real breath-freshener, stimulates digestive enzymes, thus decreasing unwanted weight, takes care of skin and brain power, excellent remedy to treat nausea, rejuvenates mind by beating stress and depression.

COTTAGE CHEESE/PANEER  is rich in Protein, Potassium and calcium, a rich source of Omega 3, rich in dietary fiber, lowers risk of Type-2 diabetes, improves hemoglobin level, and is a must for vegetarians.

So, these two Wonders are incorporated in these super-soft and tasty rotis.

These parathas can be served with any dhal of your choice. I have served with Tirangi dhal

Home made paneer





Ingredients
Wheat flour - 3/4 cup
Home made fresh paneer - 1/2 cup
Jeera - 1 tsp
Ghee - 1 tsp
Cooking/gingely oil - 1 tsp
Salt to taste

To grind
Mint leaves - 1 heaped cup, stems removed, cleaned and washed and drained
Green chillies - 2-3
Ginger - a small piece
Garlic - 2-3 pods

Enough oil + ghee to make parathas

Recipe cuisine: North Indian; Category: Breakfast/lunch/dinner
Prep time: 10 mts; Cooking time: 3-4 mts for each paratha

Yields 7 parathas

Mint, garlic, ginger and green chillies loaded into blender jar


and ground to a coarse paste


after taking out the ground paste, add little water to the jar, and keep to use for kneading the dough


Wheat flour, paneer, ground paste, jeera, salt to taste, ghee ...all these taken in a bowl


Using the water in the jar, ground to a soft dough, some oil applied finally and let aside for minimum an hour


Roll out parathas, not too thick..not too thin...first dry roast them on both sides, then drizzle a drop of ghee or oil or both mixed, cook well on both sides and take

 Why buy store bought paneer, when it can be made at home?  ....with no hassels..... it becomes more economical too for us!

There is no need to use full fat milk. I have used 3% Aavin milk, and the results are awesome!

And a special mention about the power house WHEY PROTEIN....

*Helps with weight management and reduces effects of ageing.

*Helps us old gracefully

*Prevents Osteoporosis

*Boosts immune systems

*Promotes healthy skin, hair and nails

*fights the risks of life-threatening diseases

Whey can be added to gravies, soups, rasams, sambar, koottu,  dhals, to make any gravy thin, to knead chapathi and poori dough. Can be susbstituted with water in cooking.



Ingredients

Milk - 1 litre (roughly 4.5 US cup)
Fresh curds - 1 cup
Lemon juice - 2 tbsps
Salt a pinch

Recipe cuisine: North Indian; Category: Lunch/breakfast/dinner
Prep time/draining time/refrigerating time(all put together): 4-5 hrs; Cooking time: 10 mts

Yields approx. 250 gms paneer (which is 130/-, when store bought)


Take curds in a bowl


To that, add lemon juice, mix well.


Boil milk. When it becomes frothy, about to boil.....


add the curd-lemon mixture, flames on the lowest


Keep stirring, milk has started curdling


curdling more.....


whey has separated, process is done, stove to be switched off now


Keep a fine strainer on a vessel(I keep like this, so that when you pour the curdled mixture into the cloth, it won't cave in) and put a thin towel or cheese cloth over the strainer

Pour the curdled mixture into this, and incase you are going to use crumbled paneer, then after it drains off completely, you can use right away, or store in fridge and use. Also, if you want to add any seasonings or chilli flakes to the paneer, then this is the right time....( For example., if you want to add some paneer cubes to your peas pulav, then paneer with some kasoori methi will taste amazing)


Tie it into a bundle, hang over the faucet, let it drain slowly. You can, gently press it and squeeze the excess water out


after 11/2 to 2 hours, all water has drained, take out the bundle, keep it on a plate


and keep weight over it. I have kept chapathi board over it. You can keep any cast iron tava etc too, after an hour or so, refrigerate for 2-3 hours. I actually kept it inside fridge with the rolling board.


This is the highly nutritious whey, which after cooling, can be refrigerated, and used in our everyday requirement.


It has become flat and firm now. Gently open the bundle


Soft and succulent home made paneer is ready!!!



Cut into cubes, and use as and when needed.
