Well...........the much talked about Beetroots aka Beets are high in many minerals and vitamins, cleanse the body, work as a purifier of blood, can prevent various forms of cancer, contain betaine and trytophan which relax the mind and create a sense of well-being,beet juice is used to test stomach acid levels, and I am sure...many of you did not know this..........beets were served in space for the  astronauts...........so, believe me???
Now..I tried making halwa with beets, but in a healthy way, so that we can eat it guilt-free. I made it with organic  cane sugar, and it was amazing!!

Ingredients
Beets - 1/2 kg (1.1lbs), washed, wiped, then grated
Milk - 3 cups (3%)
Cane sugar - 1 cup
Regular sugar - 1/2 cup
Saffron - few strands
Cardamom powder - 1/2 tsp
Ghee - 5 tsps
Cashews - 10, broken
Raisins - 1/8 cup

Recipe cuisine: South Indian; Category: anytime dessert
Prep time: 15mts; Cooking time: 30 mts

Yields almost 1/2 kg of halwa

Beet and milk set to boil with saffron strands, and it is nicely boiling

In the picture, in the photo in the right extreme corner, you can see, all milk has condensed well, and beet cooked to perfection. Then, both sugars added, and it gets a bit watery in the left extreme picture.

Cashews and raisins roasted to golden color in ghee and added to the halwa

Halwa served.....coming to eat??

Enjoy this healthy halwa, with Keerai Vadas and coconut chutney. Isn't that a wonderful combo tiffin?
