Down the memory lane, I am travelling now......used to make this for my kids when they used to come home  extremely hungry , from school..........and now, I made it for my grand kids...........appreciation before and now was well balanced........and my enjoyment in serving this dish, before and now , too has been same.....and now, I feel happy to share this simple recipe with you all!!
Baked beans are Navy beans (Soya beans as called in India) stewed in tomato sauce, very high in protein content and various nutrients.


Ingredients
Whole wheat bread slices as required
Baked beans in tomato sauce - 3 cans
Onions - 2, chopped fine
Red bell peppers - 2, chopped fine
Green bell peppers - 2, chopped fine
Garlic - 5 pods, chopped fine
Red chilli flakes - 3 tsps
Oregano - 3 tsps
Salt to taste
Mozarella cheese, as required 
Olive oil - 4 tsps

Prep time: 10 mts; Cooking time: 10 mts; Baking time: 7-8 mts per batch

Serves 6 - 8

Olive oil heated up in a pan, garlic and onion added.

Now the bell peppers


Now, add chilli flakes and oregano, along with salt


Mix everything well


Add the baked beans from cans, and allow the whole thing to simmer for 5-10 mts. Check and add the salt, since baked beans might have some salt in them.


Arrange the bread slices on a plate, and keep the baked bean filling on it, covering the slices fully


Top up the slices with cheese, as per your requirement



Pre heat oven to 230 degrees Celsius , and place the bread slices inside the oven, and bake them till the cheese melts and the breads turn crunchy.


Cheese has melted and the bread toasts are ready!!!



Sprinkle some chilli flakes on top, or drizzle some hot tabasco sauce and serve with steamed asparagus. What a healthy, nutritious and heavenly dinner!!! 
Only problem will be, demand will be more than expected...so, you will fall short of the yummy, tasty, crunchy  toasts......

Notes
* If you do not have mozarella cheese, processed cheese cubes can be grated and added.
*If you want your toasts to be spicy, some finely chopped green chillies can be added.
*Olives can be added too.
