Sometimes, we have a craving to eat chinese food...feel like getting something from the restaurant...but, our health-conscious mind stops us...those foods are , most of the time, high in sodium, and especially in India, they use ajinomoto liberally, which is bad for health. So, here is a very easy Chinese dish, very easy to make, so simple, you can easily whip up this dish, if you have the basic ingredients at home.
So, yesterday, when my grandkids felt like having something chinese, my daughter skilfully wove this dish with her magic wand!!! and needless to say, I loved  and enjoyed it to the core.


Ingredients
Linguine pasta = 1 packet
Julienned carrots, broccoli florets, broccoli stems thinly cut, snap peas  all together - 4 cups
Spring onions - 1 bunch
Celery - 1/2 bunch, chopped
Ginger - a small piece, finely chopped
Garlic - 6-8 pods, finely chopped
Olive oil - 4 tbsps
Extra firm Tofu - 1 packet 
Hot and spicy sauce for the tofu - 2 tbsps


For the peanut dressing
Creamy Peanut butter - 1/4 cup
Honey - 1 tbsp
Soy sauce - 3 tbsps
Rice vinegar or any kind of vinegar - 2 tbsps
Olive or canola oil - 1 tbsp
Any hot and spicy sauce - 2 tbsps

Cook the pasta in a broad pan with lot of water, with a tsp of oil


All the ingredients mentioned above for the peanut dressing, put in a bowl


and whisked to a creamy dressing


Pasta drained after cooking, with 1 tsp oil smeared on top, and please remember to save the water, which you can add to the dressing if it is too thick. My daughter had to add some.


Tofu , after the moisture removed by placing a heavy weight over it, chopped into pieces, sauteed with 2 tsps oil in the pan with the spicy sauce sprinkled over it.


It will become well roasted like this...reminded of potato roast??? 


In the same pan, add the rest of the oil, saute finely chopped spring onions


now the chopped celery


now the ginger +garlic pieces


Saute well on high flame



Now add all the beautifully julienned veggies


then add the roasted tofu pieces and the noodles 


Now is the time to add the extremely tasty peanut dressing

Keep it covered for awhile to get the veggies cooked, but remember, they have to remain crunchy too.


Perfectly done.



Serve it hot...who would be interested in going  to a chinese restaurant, if you make this wonderful dish at home???

Notes
* Cabbage, white or red can be added, if you do not get or like broccoli.
*Any kind of pasta or noodles or macaroni can be used for this dish.
*Bamboo shoots can be added too.
*Omit tofu if you do not like it or if it does not suit you.
* Since all the sauces have salt, daughter did not add any extra salt. Check and add if necessary.
