This is a simple, dry curry and a perfect combo for Chapathies with any kind of Dhal.




Ingredients
1 small Cauliflower
1 small carrot
2 big onions, finely slit lengthwise
10-12 French beans
1 green chilly, a small piece ginger, 1 pod garlic ground to a paste
1/2 tsp chilly powder
salt to taste
3-4 tsps cooking oil
1/2 tsp turmeric powder
1/2 tsp Coriander powder
1 tsp jeera

Serves 3

Chop all vegetables lengthwise.



Grind ginger, garlic, green chilli to  coarse paste




 In a broad mouthed pan, add the cooking oil, season jeera, turmeric powder, and the ground paste. Then add the onions, and on slow fire, saute them.







                                                Then, add all the vegetables,


 add chilli powder and Coriander powder, along with salt. Keep it covered by a lid, on slow flame, till the vegetables get cooked in a nice crunchy way.


Sprinkle some water and keep the kadai covered with a lid, to enable the veggies to get cooked well.




                                        Garnish with some fresh coriander / cilantro leaves.


Curry is now ready to be served with any kind of roti.
