Peanut Chutney/Groundnut/Verkadalai chutney, is not only full of flavour, but full of nutrition too. It is generally not served in any of the restaurants, it is definitely a speciality chutney. This is an Andhra special.



Ingredients
Raw peanuts - 1 cup
Small/pearl onions - 10-12
Hing powder - 1/4 tsp
2-3 tsp cooking oil
Curry leaves - 1/4 cup
Tamarind paste - 1/2 tsp
Mustard seeds - 1/4 tsp
Red chillies - 3
Salt to taste

Serves 4



In a pan, pour 2 tsps cooking oil, add hing powder, mustard seeds, curry leaves, and the finely chopped onions along with the broken red chillies and saute


       Saute for a little while. The onion don't have to get fully cooked. 



                     


In the meantime, in a microwave safe bowl, add 1 tsp oil, add the peanuts and microwave for 30 seconds. Take out, stir once, then microwave for 30 more seconds. Repeat this process, till the peanuts are nicely roasted. This is the best method since this minimises the usage of oil.





      Then , add the roasted peanuts to the sauteed onions, add tamarind paste, salt to taste.






After it cools down a bit, grind in the small jar of the blender to a fine paste. Enjoy with idlis or





Variations:
* If you need the chutney to be spicier, you can add 1 or 2 slit green chillies too, while sauteeing.
* A green bell pepper can be finely chopped, and added to, while sauteeing the onions. This lends unbelievable flavour to the chutney.
