Grilled, peeled and mashed, Brinjals / Baingans turn into an aromatic Punjabi dish,which is very popular and loved by almost all. It is clubbed with the tangy tomatoes, flavourful ginger and garlic, and goes equally well with rice or rotis.
Then add the ginger, green chilly, garlic and chopped onion
After onions turn golden, add tomatoes, chilli powder, dhania-jeera powders and salt to taste, and keep sauteeing till ..........

Ingredients
Big purple variety Brinjal - 1
Onion - 1, finely chopped
Garlic - 2 pods, chopped
Ginger - a small piece, finely chopped
Green chilly - 2, finely chopped
Tomatoes - 2, big, finely chopped
Chilli powder - 1 tsp
Dhania powder - 1 tsp
Jeera powder- 1 tsp
Salt to taste
Coriander leaves for garnishing
For seasoning
Cooking oil - 3 tsps
Turmeric powder - 1/2 tsp
Jeera - 1 tsp

Add cooking oil in a pan, and season the above mentioned ingredients
Then add the ginger, green chilly, garlic and chopped onion

Now add the mashed, grilled Baingan / brinjal / egg plant also, and mix well.
Serve hot with any kind of rotis or rice.
