This is a simple version of a mixed vegetable curry, which goes along with sambar or rasam. It is very simple and easy, you can just toss in whatever vegetables you have in the fridge, especially on a rainy day, this is so good, along with hot steaming rice and any kind of rasam. Ingredients
Vegetables, shown below:
Big onions - 2, finely chopped
Green bell pepper - 1, chopped
Red bell pepper - 1, chopped
Carrot - 1, big, chopped
Beans - 20-30, chopped
Potato - 1, large, chopped and dropped into water, so that they won't turn black
Sprinkle some water, keep on the lowest flames, keep covered with a lid.

Turmeric powder - 1/2 tsp
Hing powder - 1/2 tsp
Mustard seeds - 1 tsp
Jeera - 1 tsp
Split urad dhal - 1 tsp
Broken red chillies - 4-5
Curry leaves - handful

Serves 4-5
In a wide mouthed pan, add cooking oil, and add all the seasoning ingredients mentioned above
Then, first add the chopped onions and curry leaves
Add chopped bell peppers
Now, add carrots, beans and potatoes
Add salt, mix and stir well.
Sprinkle some water, keep on the lowest flames, keep covered with a lid.
Vegetables half cooked
Almost done
Serve with hot rice, vadams, sambar or rasam. Goes well with chapathies too.
