Both Coriander and Gooseberry......natural coolants, replete with Vitamin C, good for summer.........have been combined in this rice, which turned out to be not only tasty but healthy too.


Ingredients
Basmati rice - 1 cup
Coriander - 1 heaped cup
Gooseberries - 6, grated
Green chillies - 3
Ginger - a small piece
Peanuts - 1/4 cup
Salt to taste


For seasoning
Gingely oil - 3 tsps
Asafoetida / hing powder - 1/4 tsp
Mustard seeds - 1 tsp
Broken Urad dhal - 1 tsp
Channa dhal - 1 tsp

Things that have contributed for the goodness of this rice


Grind ginger, green chillies and coriander to a smooth paste


In a pan, heat up oil, add all the above mentioned ingredients; Then add the grated gooseberries; Then add the ground coriander-ginger-green chillies paste; add salt; mix well.


In the meantime, cook rice separately, allow to cool down. On top of the cooled above seen paste, gently add the cooled down rice.. Please be patient, don't try to mix immediately.




Now, add the microwave-roasted peanuts, and gently mix, see to it that the sauteed coriander-gooseberry paste is liberally mixed all throughout the rice.


Serve with papads.

  1. I have,t heard of any rice made of gooseberry ! Wow! Innovative! And to mention the boosters like corriander leaves and peanuts to enhance the taste and nutrient content! My next move is to rush to the nearest veggie shop and get hold of gooseberries and make this delicious dish!! Um.. It gives me goosebumps! Hee hee!
