This is not only a colorful dip, but very tasty also. Goes very well with beet rolls, and it is very easy to make this dip.

Ingredients

Thick chilled curds/yogurt - 2 cups
Mango puree - 3/4 cup(from 1 small, ripe, any variety of mango)..I used banganapalli
Coriander 3/4 cup, ginger - 1 small piece & 2 green chillies ground into a paste
Salt to taste

Serves 3

Mango puree, salt and coriander paste added to curds


and whisked well


Chilled, cool dip with the flavour of mango and coriander complementing each other, and the taste amplified and escalated to a great extent by ginger, served along with the hot beet rolls, stuffed with paneer and baby corn.
