A whole some and alluring bread delight, which can be served as a starter before lunch or dinner, or as a snack. Bread cups contain loads of corn and cottage cheese, which are high in calcium and protein, both very essential for Vegetarians. And this is a very appealing way to make the kids eat these cute cups, without them realizing how much nutrition they have!!!

Ingredients
Whole wheat bread slices - 10
Processed cheese - 4 cubes, grated
Corn - 1 cup, cooked for 2 whistles
Paneer - made from 2 1/2 cups milk
Onion - 1, finely chopped
Ginger-garlic paste - 1 tsp
Green bell pepper - 1, small, chopped
Red bell pepper - 1, small, chopped
Tomato ketchup - 1/4 cup + 2 tbsps
Chilli powder - 1 tsp
Olive oil - 3 tsps
Ajwain / Carom seeds - 1/2 tsp
Italian seasonings - 2 tsps
Kasuri methi, crushed - 2 tsps
Salt to taste
Olive oil spray to grease the muffin pan

Prep time: 10 mts; Cooking time: 10 mts; Baking time: totally 20 mts
Yields 10 Bread Cups
Half cooked corn kernels
Fresh home-made Paneer from 2 1/2 cups milk
Heat a non stick pan, add some olive oil, and season ajwain seeds
Add the ginger garlic paste, chopped onions, and bell peppers. You don't have to saute them till they become well cooked. They just have to remain crunchy.
Now, add chilli powder, crushed kasuri methi and the italian seasonings
Mix well
Add the corn, paneer and salt to taste
Add the tomato ketchup. This helps to keep the filling moist.
Keep the prepared filling in a vessel.
Muffin pan greased with Olive oil spray. If you do not have it, you can just grease the muffin pans with olive oil or cooking oil
Trim the edges of the bread slices.
Flatten them with a rolling pin
And, fit it into the muffin pan, by slightly folding and adjusting

Fill them generously with the prepared filling
Top with the grated cheese
Pre-heat the Oven to 200 degrees C, and bake these cups for 10 minutes or till the cheese melts.
Perfectly done.
Serve these healthy and tasty, crisp Bread cups with ketchup.

Notes
* You can let your imagination run riot, as far as the filling is concerned. This filling can be called two-in-one, because, it can be used to make grilled sandwich too.
* You can fill it with some pasta sauce, then fill raw bell peppers, corn, a spinach leaf, olives and jalapenos, top with mozzarella cheese, and here come your Bread Pizza cups!!!
*Regular potato & mixed veg filling can be made and used too.
* You can fill the cups with some sauteed cabbage, carrots and bell peppers, enhance the taste by soy sauce and chilli sauce, top them with some cooked macaroni, sprinkle some cheese.....and lo! here are your Chinese Bread Cups!!!
* Fill your cups with some sprouts, channa, a piece of boiled aloo/potato, top with cheese, bake, and then drizzle some green and sweet chutneys, and here are your Bread Chat Cups!!!
* You can use any kind of cheese, mozzarella or even cheese slices can be cut into small pieces and topped.
* The color of the cups is obviously not golden, since these are whole wheat slices. If you make them with white bread slices, then the color will be beautiful.....but we all know...what is appealing to the eyes is not important..it must be healthy...must be appealing to our health.......
