This is a simple breakfast/tiffin, which can be whipped up in no time. Made with all the ingredients easily available at home.
Ingredients
Whole wheat bread slices - 6
Onion - 1, chopped
Green bell pepper - 1, small, chopped
Red bell pepper - 1, small, chopped
Tomatoes - 2, chopped
Ginger- a small piece, finely chopped
Sambar powder - 1/2 tsp
Salt to taste
To toast the slices
Ghee - 1 tsp
To season
Cooking oil - plus ghee - 2 tsps
Hing powder - 1/2 tsp
Mustard seeds - 1 tsp
Jeera - 1 tsp
Slit green chillies - 3
Coriander leaves/cilantro for garnishing

Heat a non stick tava, drizzle 1 tsp ghee on it, and toast the bread slices until they are crisp and golden, flip them over and toast too. Then allow tyo cool for awhile, cut into small squares.
Heat another pan, add oil, and season hing powder, mustard seeds and cumin seeds.
After the mustard seeds splutter, add the chopped onions along with finely chopped ginger and slit green chillies
Let the onions become translucent, then add the chopped bell peppers and sambar powder.
Add salt to taste, add some coriander leaves also, while sauteeing
Add 2-3 teaspoons water, so that the tomatoes will become mushy
Then add the cut bread squares
Mix well.
Serve hot with tomato ketchup. It tastes divine. Must be eaten hot.

Notes
* Other vegetables like carrots and green peas can be cooked ahead and added too.
*White bread can also be used.
*To pump in more nutrition, we can cook some black eyed chick peas (karamani) and add them too.
