Almonds...........a rich source of Vitamin E, consumed by many who are aware of its health benefits, like weight management, heart risks, diabetes etc.............Cashews............packed with anti oxidants, minerals and vitamins..........walk hand in hand with Carrots.........so good for eye sight....in this lovely kheer.....
Ingredients
Milk - 6 cups (Set aside 2 cups)
Carrots, cubed and pressure cooked - 3/4 cup
Almonds, soaked in hot water - 1/2 cup
Cashews, soaked in hot water - 1/2 cup
Sugar - 1/2 cup
Saffron - a big pinch
Cardamom powder - 1/2 tsp

Serves 6-8
Cashews and almonds soaked
Saffron soaked in warm milk
4 cups milk set to boil with saffron and cardamom powder
Almonds skin peeled and along with cashews, loaded in the blender jar
Getting ground. When it is 3/4 ground....add
add the boiled carrots too. and continue grinding....

From the milk which has been set aside, add some to cleanly mix and take from the blender jar
Add the rest of the milk, set aside too, and after mixing well, keep on lowest flames. Keep stirring, it might stick at the bottom.
After 5 minutes, add the measured sugar, continue stirring.
After 10 minutes, it will become a thick and frothy mixture, sugar would have completely melted. Switch off at this point.
Add this mixture to the 4 cups milk, already boiled with cardamom and saffron. Stir well.
Bring to a boil, and switch off. The kheer is ready! Can be served warm or chilled.
Notes
*When children come back from school with pangs of hunger, this is best for them. So much nutrition will go inside, and they will be charged with energy.
