You can call it a fruit raita too. Pineapple, very low in calories, contains a very unique protein-digesting enzyme, is very good for arthritis sufferers, gives you a glowing skin and is a wonderful anti oxidant too. Pomegranate is a good source of fibre, very strong anti oxidant, and also a good source of Vitamins and Minerals. Carrot, which is as healthy as these two, also enters the raita. Chill this raita and enjoy with any rice of your choice.
Garnish with coriander leaves before serving.
