This is a nice variation of our South Indian Koottus. At times, we feel bored of the same coconut-ground koottu. This koottu is a simpler one, and can be used as an accompaniment for Chappathies too. I have made with palak now.
This koottu can be made as an One pot koottu in Pressure Cooker too.
Saute everything in Pressure pan, after seasonings, add palak, saute, then add soaked moong dhal, pour water till immersing level, add salt, cook for 3 whistles. Done!!!


Ingredients
Palak - 1 bunch, chopped and washed & pressure cooked
Moong dhal - 3/4 cup, pressure cooked, with 1/2 tsp turmeric powder
Water - 2 cups
Sambar powder - 1 tsp
Onion - 1, chopped
Tomatoes - 2 cuopped
Green chilli - 1, slit
Hing powder - 1/4 tsp
Grated coconut - 2 tsps
Salt to taste

To season
Cooking oil - 2 tsps
Split urad dhal - 1 tsp
Jeera - 1 tsp
Red chillies- 1-2, broken

Serves 3-4

Onion and tomatoes chopped, green chilli, slit

In a pan, add cooking oil, season the above mentioned ingredients


Add onions and saute.


now, tomatoes......


Wait till tomatoes become mushy....and.....


pour 2 cups water, add sambar powder and salt to taste


Allow it to reduce to half.....and then.......


add the cooked moong dhal and the blended palak.



                                                 add the grated coconut. Simmer for 5 minutes.

Steaming hot,  Andhra style palak koottu ready, to be served with rice or rotis!!

Notes

* Any vegetables of your choice can be used to make this koottu.
* If you are using veggies, then skip the step of blending.
*After sauteeing onions and tomatoes, palak or vegetables can be cooked along with them too, but it takes longer time. If you have the time to pan-cook the vegetables on slow fire, you are welcome to.
*2-3 pods of garlic also can be added, which enhance the taste.
