Aloo Matar...........Can you show one person who does not like this yum yum subzi, which goes very well along with rotis or any pulav??? I bet, you can't.
 Now is the season of fresh peas.....where ever you turn, you can see fresh peas now..........This is a very simple version of Aloo Matar , which can probably be called the most  popular among the North Indian subzis and it is loved by one and  all, across the globe.
 Always potatoes and peas form a good combo, and serve this aromatic Aloo matar, piping hot, with rotis!!!


Ingredients

Potatoes - 3, peeled and cubed, and dropped into water
Peas - 3/4 cup
Onion - 1
Tomatoes - 2, chopped
Tomato - 1, pureed
Ginger garlic paste - 1 tsp
Turmeric powder - 1/4 tsp
Chilli powder - 1 tsp
Jeera powder - 1 tsp
                                                             Coriander powder - 1 tsp
Garam masala powder - 3/4 tsp
Amchur powder - 1/2 tsp
Salt to taste
Coriander leaves for garnishing
Cooking oil - 4 tsps

Prep time: 10 mts; Cooking time: 20 mts

Serves 2

All veggies kept ready


In a pan, oil heated, and jeera seasoned along with turmeric powder


Now add onions and ginger-garlic paste


Let the onions become translucent, then add tomatoes


In the meantime, puree the tomato and keep it ready


Onions and tomatoes being sauteed well.


Now add the potatoes and peas


Also all the powders, save amchur


Add the tomato puree


Some water and salt required


Keep the flames on the lowest, cover with a lid


A little while later...this is how it will look


Check whether a potato crushes beneath your thumb....that means, all veggies cooked perfectly. Now, add the amchur powder


The Aloo matar has become a semi gravy subzi.....If you like it to be watery, add some more hot water


Garnish with coriander leaves


Serve hot with rotis...the tomatoes , chopped and pureed, nicely simmered along with the other spices, give the taste of a salsa, and the softly cooked potatoes and fresh peas, make you eat more number of rotis!!
