The whole house is permeated with the flavour of this home-made special sandwich masala...Though so many varieties are available in the market, nothing to beat this. You must remember to make this in small quantities so that it does not lose its freshness and aroma.
Often in so many food joints, I have seen them sprinkle some magic powder over the sandwiches.....and have rattled my brain what could be in there.......now, thanks to Tarla Dalal...I have discovered and mastered the secret recipe!!! And, instantaneously, I want to share it with my dear blog readers!!!
Don't commit the mistake of adding too much of this masala, thinking it will add flavour to the sandiwch..........that will become so pungent and over powering...this must be really added like a precious, magic potion...in very tiny quantities...

Ingredients
Jeera - 1 tbsp
Cloves - 1 tsp
Cinnamon sticks - 1 tsp
Black pepper - 1 tsp
Fennel seeds / Saunf - 2 tsps
Star Anise - 1/2
Black salt - 1 tsp
Rock salt - 1 tsp
Amchur / dry mango powder - 1 tsp

Yields roughly 12 tsps
All kept ready
Dry roast the ingredients till they all emit a nice aroma, and all the spices have turned slightly golden
After cooling down, powder them in a blender jar
To this powder, add rock salt, black salt and amchur powder and blend once again, so that no lump will be there
Blended powder taken in a small bowl
