In my home, all love basundhi...and now, being the peak mango season, I came upon this innovative idea of incorporating mango pulp and the milk, which has been reduced thoroughly. You need to choose the sweet variety mangoes. I had Banganapalli , and it gave me amazing results!
Add sugar at this point, after it melts completely, gently put in all the collected cream.
After it cools down completely, gently add in the mango puree. Mix well.

Ingredients
Milk - 12 cups (Always I mean the US measurement of cups, which is given downbelow)
Sugar - 1/2 cup
Mango puree - 1 cup
Saffron a few strands, soaked in warm milk
Cardamom powder - 1/2 tsp

Yields 8 small cups
Allow the milk to boil in a broad mouthed pan, adding the saffron strands and the cardamom powder. Keep the flame on medium, after milk starts boiling
Collect the cream of the milk as it keeps forming (Malai)
Milk keeps reducing nicely, and cream is formed.
Milk has reduced thoroughly. Just 2-3 cups of milk is there .

Refrigerate it for 2-3 hours.
