There is a favorite  mexican restaurant in the US....   Qdoba........which we used frequent...love this soup served there..I wanted to make at home, my daughter immediately went and asked the chef for recipe, and he was so thrilled to share it, when we told him I am going to share in my blog. And, here is the recipe....it is so good for winter, rainy days and chilly nights. So filling, yet light, very healthy, no fatty things here. Is Vegan, involves no dairy products.

Ingredients
Corn tortillas - 6, torn into small pieces
Onion, big - 1, chopped fine
Garlic - 6-8 pods, chopped fine
Poblano pepper - 1/2, deseeded and chopped fine
Jalapeno peppers - 2, deseeded and chopped fine
Vegetable broth - 1 carton (roughly 4 cups)
Water - 3-4 cups
Fire roasted tomatoes - 1 cup
Crushed tomatoes - 1 cup
Jeera/cumin - 2 tsps
Olive oil - 3 tbsps
Salt to taste

Prep time: 15 mts; Cooking time: 30 mts

Serves 6-8

In a large pan, heat up the olive oil, add onions and garlic. Saute well


Add the chopped poblano and jalapeno peppers


Add cumin/jeera powder


Add the corn tortillas, torn into small pieces


Mix well


Add the vegetable broth


Add the crushed tomatoes


then the fire roasted tomatoes


all mixed well


Add salt to taste


Allow to simmer in slow fire for 15 minutes


Then hand blend to a smooth puree


The tasty, hand blended soup is ready to be served


Top up with some crunchy tortilla chips and a dollop of cool sour cream and serve .

Notes
* If Poblano and jalapeno peppers are not available, green chillies can be chopped fine and added
* I am sure, corn tortillas are available in India, otherwise, you can add 2 cups of crushed tortilla chips
*Doubt whether fire roasted tomatoes and crushed tomatoes are available in India. For fire roasted tomatoes, we can nicely saute tomatoes and then puree them. For crushed tomatoes, you can grate the tomatoes.
