Paneer bhurji might remind many of masala scrambled eggs. Extremely tasty, and that too, when made with the home made paneer, it tastes awesome and very soft in texture. It is a wonderful side for the rotis. Ideal for lunch boxes.

Ingredients
Home made paneer made from 6 cups of 3% milk
Onion - 1, chopped fine
Colored bell peppers, chopped - 1 cup
Tomatoes - 3, grated
Ginger-garlic paste - 1 tsp
Kasuri methi - 2 tsps, crushed
Chilli powder - 1 tsp
Coriander powder - 1 tsp
Jeera/cumin powder - 1 tsp
Garam masala powder - 1 tsp
Coriander leaves for garnishing
Sugar - a pinch
Salt to taste
To season
Cooking oil - 3 tsps
Jeera - 1 tsp

Serves 3-4
Heat a pan, add oil and season jeera.
Add chopped onions, wait till they become translucent
add the ginger garlic paste also, saute well.
Now, add the chopped colored bell peppers and the crushed kasuri methi and saute well.
Add chilli, coriander and jeera powders
Now, add the grated tomato puree
Add salt to taste, and a pinch of sugar
Add the crumbled paneer. I had made paneer the previous day, and refrigerated. This makes the work asier. Add the garam masala powder too
If necessary, add 1/2 cup water, simmer till all the flavors blend together.
Serve this extremely tasty and soft bhurji with soft phulkas.
