This is absolutely a summer salad, very very healthy. It has dates in it, and also the whole green gram dhal.

Ingredients
Dates - 2-3, finely chopped
Red bell pepper - 1/2, chopped
Green bell pepper - 1/2, chopped
Mint leaves- 1/4 cup, washed and chopped
Watermelon - 1/2 cup, chopped
Pomegranate arils - 1/2 cup
Cooked green moong beans - 1/2 cup
Salt to taste
Pepper powder to taste
Grated carrots - 1/2 cup
Lemon juice - 1 tbsp

Recipe cuisine: Indian/International; Category: Lunch/dinner
Prep time: 10 mts; Cooking time: 15 mts(for the green gram dhal); 
Soaking time for the green gram: over night

Serves 3

Chopped dates and bell peppers in a bowl


Mint leaves added



Watermelon and pomegranate


Soaked, cooked and cooled green moong beans added, along with salt and pepper to taste


Lemon juice added


Forgot to add the grated carrots...they enter the bowl only now...


Mix well


and refrigerate for  minimum 2 hours before eating


Such a healthy and nutritious salad...a meal by itself!!!

    Ingredients: Grapefruit, orange and pineapple juice, 2 teaspoons cornstarch, 1/4 cup white vinegar, 2 tablespoons vegetable oil, 1 garlic clove, minced, 2 to 3 teaspoons sugar, 1 teaspoon prepared mustard, 1/2 teaspoon salt, 1/2 teaspoon paprika, 1/2 teaspoon ground nutmeg, 8 cups torn iceberg lettuce, 6 cups torn Bibb lettuce and fresh strawberries

    Directions:
    In a saucepan, stir juices and cornstarch until smooth. Bring to a boil over medium heat; cook and stir for 2 minutes.

    Add vinegar, oil, garlic, sugar, mustard, salt, paprika and nutmeg; stir to mix. Cover and chill. In a bowl, toss lettuces, oranges, pineapple and strawberries. Pour dressing over salad and toss. Enjoy
