Yet another recipe of my daughter again............
Peppers stuffed in mexican style...such a healthy, nutrition loaded recipe...baked...less oil.......very easy and you must try this!!

Ingredients
Green bell peppers - 3
Red bell peppers - 6
Olive oil - 3 tbsps
Onion - 1, chopped fine
Garlic - 6 pods, chopped fine
Spring onion - 1 bunch, chopped fine
Olives - sliced, 1 cup
Corn - steamed for 5 mts, - 1 1/2 cups
Black beans - 1 1/2 cups, soaked over night and pressure cooked
Spinach - 4 cups
Chilli powder - 1 1/2 tsps
Cumin/jeera  powder - 2 tsps
Salt to taste
Grated cheese as required for topping
Sour cream as required for decoration

For the spanish rice
Olive oil - 2 tsps
Garlic - 4-5 pods, finely chopped
Onion - 1, finely chopped
Tomatoes - 2, chopped
Green chilli - 1, slit
Chilli powder - 1 tsp
Brown rice - 1 cup, soaked and drained
Water - 2 1/2 cups
Salt to taste
Cilantro for garnishing

Prep time: 30 mts; Microwaving time: 3-4 mts; Baking time: 25-30 mts

Yields 12 halves


Heat oil in a pan, add chopped onions and garlic pieces


Now the spring onions


Olives


steamed corn


cooked black beans (can be substituted with rajma too)


spinach


chilli and cumin powders added and sauteed well


salt to taste added


In a pressure pan, add oil, saute onions, garlic, green chilli, chilli powder, tomatoes, then the drained brown rice, salt to taste, cilantro, and cook for 2-3 whistles


Add this spanish rice to the earlier sauteed mixture


Mix well and switch off

bell peppers washed and wiped clean


cut into halves, seeds removed, and microwaved for 4 minutes


Oven pre heated to 400 degrees F (230 degrees C ), the microwaved bell peppers neatly arranged on a foil


filled generously with the highly nutritious filling



topped with grated cheese



and baked for 20-25 minutes, then served with guacamole and corn chips, and sour cream is piped on top of the bell peppers!!! Really a heavenly treat!!
