Always I feel, ginger and green chilli is a perfect combination and both together, emanate such superb flavour. This vegetable curry, tastes so good, and has amazing flavour of ginger and green chillies, and there are no other spices to compete with their flavour. No onion, no garlic too, such a saatvik vegetable side dish
First add the bell peppers along with the ground ginger and green chillies
Lot of vegetables have gone into it
Ingredients
Small potatoes - 10
Green bell pepper - 1
Cauliflower - 1, small
Carrots - 2, medium sized
Fresh peas - 1/2 cup
Beans - a handful
Salt to taste
Cooking oil - 3-4 tsps
Jeera - 1tsp
Turmeric powder - 1/4tsp
Hing powder - 1/4 tsp
Chopped coriander for garnishing
To grind
Green chillies -2
Ginger - a small piece

Serves 4
In a pan, add oil, then add hing powder, turmeric powder and jeera.
Then add all the vegetables, add salt to taste, sprinkle some water, and keep the pan covered, keeping the flames on low. Take care to turn the vegetables once in a while.
After it is done, garnish with chopped coriander leaves, serve hot with methi rotis or plain phulkas, with any dhal of your choice.
