This is the Rasam, which can be stored for sometime in the fridge, this rasam is without any dhal. It looks like a clear soup, full of flavour and very tasty. It is very good to have a cup of Rasam before the meals, because the Rasam, enriched with the flavour of Black pepper and Jeera, boosts your hunger like anything.
Ingredients
Firm and ripe tomatoes - 3, pureed
Sambar powder - 1 tsp
Water - 6 cups,3 to be added to the tomato puree, and later 3 to fill the vessel level
Hing - 1 solid piece
Curry leaves
A pinch of jaggery
Salt to taste
For seasoning
Ghee - 2 tsps
Mustard seeds - 1 tsp
Jeera - 1/2 tsp
Pepper powder - 1/2 tsp

Coriander leaves, chopped, for garnishing
Tomatoes pureed, added with 3 cups water, sambar p[owder, jaggery, hing, salt to taste, curry leaves added and allowed to boil and reduce
After the level reduces to half, fill upto brim with water, season the above mentioned ingredients, garnish coriander leaves, and serve hot with any vegetable, papads and rice.
*This Rasam stays fresh in the fridge for a month too. Since this does not have dhal in it, whenever it is reheated, it smells so good, and exactly tastes like fresh Rasam.
* Very ideal rasam for mothers, starting Rasam saadham for toddlers, when they just need one small cup of rasam to be mixed with dhal and rice. They cannot be making it everyday. This way, they can store the rasam, even for a fortnight.
