As it is, dhals are rich in proteins...if I add some veggies also to it, just imagine what a  wholesome side dish  that will be!!!
I made this special dhal with tur and moong dhals, enriched by the black eyed brown variety chickpeas (cowpeas), then I also added carrots, beans and fresh peas.
 I did not add any onion garlic also, so, we can call this a Saatvik dhal, which we can make on fasting or any ritual days too
Adding vegetables to the lentils provides a beautiful texture to the dhal, which is a visual treat too.The traditional "tadka", aka seasonings, takes the aroma of the dhal to unbelievable heights
   Diet conscious people can just have 2 bowls of dhal !! It is a healthy meal!!



Ingredients
Tur dhal - 1/4 cup
Split moon dhal - 1/4 cup
Black eyed chick peas - 1/8 cup (any variety can be used)
Turmeric powder - 1/4 tsp
Chopped carrots - 1/8 cup
Chopped beans - 1/8 cup
Fresh peas - 1/8 cup
Sambar powder - 3/4 tsp
Coriander powder - 3/4 tsp
Jeera powder - 3/4 tsp
Fresh coriander leaves for garnishing
Salt to taste

For Seasoning
Cooking oil - 1 1/2 tsps
Ghee - 1 1/2 tsps
Jeera - 1 tsp
Slit green chilli - 1
Chopped ginger - 1 tsp
Chopped tomato - 1

Serves 2

Dhals along with black eyed chick peas and turmeric powder, soaked in hot water for 1/2 hour



Vegetables added

Sambar powder, coriander & jeera powders added


Cooked for 3 whistles.


Stir very gently, otherwise, it will become a mashed pulp. Add salt



Add required hot water to bring the dhal to desired consistency


In a pan, add oil and ghee, and season jeera


After the jeera / cummin seeds splutter, add the green chilli, ginger and chopped tomatoes


Keep on low flames and saute till the tomatoes become mushy


Add the sauteed tomato with other seasonings and also garnish with coriander / cilantro leaves


Mix well.


Serve with phulkas or rice...choice is yours!

Notes
*Garlic and onions can be added while seasoning.
*Adding Cauliflowers is not advisable, it becomes mushy and spoils the texture of the grainy dhal, with all the veggies showing.
*Dhal varieties can be substituted with other varieties of your choice.
