I have a couple of happy tidings to share with you!!!
On September 15th, Kumudam Snehidhi featured news about my blog. On 16th of the same month, a small book of "Quick and healthy 32 recipes" was published as a supplement along with the Mangayar Malar.

The soft malai koftas, immersed in the tomato-onion gravy just melt in your mouth.....you can eat them guilt-free......She makes this dish with so much expertise, and I am enjoying the healthy versions of cooking made easy by the various things available here in the US. These koftas contain corn, kale, spinach etc, and they are not deep fried, just microwaved, and also so much care has been taken about the gravy to make it a healthy one....no butter or fresh cream.....
So, go ahead, make this lovely dish and satiate your hunger pangs!!!!
Here you can see them served with the tasty, nutrition enriched Carrot-mung rotis


Ingredients

One box organic veggie bites for the koftas ( Take as many as you want and microwave just before serving)



For the gravy
Tomatoes - 6-8, chopped
Onions - 2, chopped
Ginger - 1 tsp, finely chopped
Garlic pods - 6, chopped
Kasoori methi - 2 tsps
Chilli powder - 1 1/2 tsps
Coriander powder - 1 1/2 tsps
Jeera powder - 1 1/2 tsps
Garam masala - 1 tsp
Shahi paneer masala - 1 tsp
Milk - 2 cups
Sugar - 1 tsp
Salt to taste
Cashews and almonds - 10 each, soaked

To Season
Olive oil - 4 tsps
Jeera - 2 tsps
Turmeric powder - 1/2 tsp
Recipe cuisine: North Indian; Category: Lunch / dinner
Prep time: 15 mts; Cooking time: 20 mts

Serves 6

Heat olive oil in a broad non stick pan, and season jeera. after it splutters......


add turmeric powder and the chopped onions. Continue sauteeing.....

add ginger and garlic, flames on the lowest and saute well.

add the chopped tomatoes


Add the kasuri methi, well crushed


All the spice powders above mentioned added.


soaked almonds and cashews also enter the scene....


all sauteed well, till the tomatoes become mushy, and the raw flavor of the spices vanish, let to cool down, then loaded into a blender jar and pureed to a soft texture


salt and sugar added


milk also added, mix everything well, and allow the gravy to simmer for 10 minutes. 


switched off now.


picture below shows batches of veggie balls being microwaved, and taken out and kept ready. We must not directly put them into the gravy. The balls are so soft, they will disintegrate. We have to arrange them in small batches as and when we require, and pour the hot gravy over the hot microwaved balls.

No swirling of fresh cream too....so healthy!!!

Notes
* My fellow residents of India, do not worry.....I doubt whether we get such good quality organic veggie balls in India. Probably, we have to look into the freezer section in some gourmet stores.
.............................................. But where there's a will, there's a way!!! we can add spinach, corn, squash, zucchini, carrots etc along with salt and other spices of our choice, add some corn flour for binding purpose, make small balls, then, microwave them in steamer for 5 minutes, or bake them in an oven for 10 minutes. I am sure, the balls will stay in shape if we do this. They will retain their softness too, we just have to pour the gravy over the kofta balls. 
* Garnishing with coriander / cilantro leaves is optional.

  3. What a wonderful recipe! And how rich without being "RICH".Plunged and soaked in an overflowing goodness of aromatic gravy!! The photo shot is absolutely stunning!! Yes we have to go in search of the availability of veggie bites in gourmet shops. Hope I find the treasure in India too.
