What is Kadhambam???
 "Kadhambam" means, different colored flowers strewn together.....
Similarly, in this rice, which is apt to be offered to God as Prashaadh (neivedhyam), different vegetables and legumes are included. My brother's wife from Salem told me, her priest told her about this recipe, and she made it with white rice. I made it healthier, by using the broken matta brown rice. So healthy, so nutritious...yet very light on stomach...
Also, another important thing is only our Indian vegetables are used in this...நாட்டு காய்கறிகள்

Picture below shows different  kinds of kadhambams to be offered to Bhagawan.....This Kadhamba rice is also for the Bhagawan inside each one of us..."Aham Brahmasmi".....


Ingredients
Broken matta brown rice - 1/2 cup
Tur dhal - 1/4 cup
Water - 3 cups
Tamarind paste - 1 tbsp
Brinjals - 6, cubed
Broad beans - 10-12, cut
Ash gourd - a small piece, cubed
Yellow pumpkin - a small piece, cubed
Curry leaves - handful
Salt to taste

Kabuli channa - 1/8 cup, soaked over night
Peanuts - 1/8 cup, soaked over night

To roast and grind
Channa dhal - 3 tsps
Coriander seeds - 2 tbsps
Pepper - 1 tsp
Red chillies - 3-4
2 tsps oil to roast

To Season
Ghee - 3 tsps
Mustard seeds - 1 tsp

Serves 4



All the veggies  cut and kept ready


Kabuli channa and peanuts soaked over night, then pressure cooked


Broken matta brown rice and tur dhal measured and taken, pressure cooked with measured water, , and mashed
           

All the ingredients mentioned above for roasting, roasted in a pan in 2 tsps oil, then ground to a fine paste


I actually pressure cooked white and yellow pumpkins for 1-2 whistles, otherwise, they will not get cooked evenly with brinjals and broad beans. All the veggies , kept in a pan, with water enough to immerse them


Add tamarind paste, and also the pressure cooked kabuli channa and peanuts


Keep covered with a lid, so that all vegetables will get cooked well


Tamarind water reduced, veggies also cooked by now.


Add the ground mixture and salt to taste, flames on the lowest, allow to boil for 5 minutes


Or you can pressure cook all veggies with tamarind paste, then add the cooked channas and peanuts






Now, add the mashed brown matta rice and tur dhal


Mix well, keep on low flames.


Add a bunch of curry leaves on top


Heat a pan, with ghee in it, season mustard seeds and.....


pour on top of the curry leaves. The flavor and aroma will permeate thru the house, and will kindle your hunger


Serve the delectably delicious Kadhamba Saadham, with roasted papads and vegetable of your choice.

* We can use any kind of rice..white, basmati, brown basmati, quinoa, millets....whatever suits you
