This beautiful green Spinach Soup is definitely a low-cal soup.....loaded with nutrition, and also high in vitamins, minerals and phyto-nutrients. Ingredients
Spinach - 1 bundle, roughly 3 cups, washed and cleaned and chopped into big pieces
Onion - 1, chopped
Garlic - 4 pods
Ginger - 2 tsps, finely chopped
Chilli flakes - 3/4 tsp
Salt to taste
Olive oil - 2 tsps
Dry basil - 3/4 tsp
Pepper powder - 3/4 tsp
Milk - 3/4 cup
water - 1/2 cup

Yields 4 medium bowls of soup
All neatly lined up
Olive oil heated in a pressure pan, garlic-ginger and onions added, after they turn translucent, spinach leaves added
Salt and chilli flakes added and sauteed for 2 minutes, then ......
1/2 cup water and pressure cooked for 3 whistles.
Opened after the pressure settles down, let to cool down completely
then loaded into a blender jar
blended well. I did not bother even if there were few small stalks, I left them as they were, did not strain. Now 3/4 cup of milk added and mixed well.
Now add dry basil and pepper powder and bring to a boil.
Look at the beautiful, rich soup!! rich with nutrients and not fatty butter or fresh cream!
Serve hot with brown bread toasts!!!
