Ingredients
Whole wheat flour - 3/4 cup
Fresh home made paneer - 1/2 cup
Fresh turmeric - 1 rhizome
Green chilli - 1
Mint leaves - a handful
Coriander leaves/cilantro - a handful
Jeera/cumin seeds - 1 tsp
Salt to taste
Ghee - 1 tsp
Enough oil and ghee mixed to make parathas

Prep time: 10 mts; Cooking time: 20 mts
Yields 6 rotis
To the whole wheat flour, add the following:
1. Crumbled paneer
2. 1 rhizome turmeric and green chilli ground paste
3. Mint and cilantro, washed, wiped, and microwaved at the intervel of 30 seconds till they become dry, then crushed and added
4. Jeera - 1 tsp
5. Salt to taste
6. Ghee - 1 tsp
All the above mentioned things kneaded into a soft dough, covered and kept for 30 minutes, after smearing some gingely oil on the dough
6 balls pinched and kept
rolled into rotis
first dry -cooked on both sides, then some oil and ghee added
cooked to perfection
The super-soft rotis served with dhal, or any pickle with curds
