Potato Spicy Podimas .........even though it is a South Indian Curry, it goes very well with Chapathies also. For kids' lunch boxes or as packed food for travel. This is a very simple curry, but crumbling of the potatoes should be done carefully. You should not mash it with a masher, then it will look like a paste.



Ingredients
Potatoes - 5, pressure cooked and cooled
Chilli powder - 1 tsp
Salt to taste
Fresh curry leaves - handful

For seasoning
Cooking oil - 4 -5 tsps
Hing powder - 1/2 tsp
Turmeric powder - 1/2 tsp
Mustard seeds - 1 tsp

Serves 3

Pressure cooked, cooled and peeled potatoes, gently crumbled with hands, curry leaves topped


In a pan, add cooking oil, and season the ingredients mentioned above


Then keeping the flames on the lowest (or you can switch off for a minute too), add chilli powder, so that it will not turn black and spread its spiciness all over the house and make everyone cough and sneeze


Then add the crumbled potatoes along with salt to taste


Mix well, saute till potatoes absorb the taste and flavour of chilli powder. 


Will taste delicious with Drumstick-onion Vatha kuzahmbu



Variations
* White potato podimas is also an excellent curry. For that, cook, cool and crumble potatoes the same way. Then in cooking oil, season hing powder, green chillies, ginger, finely cut or grated, curry leaves, and also 2 tsps of fresh grated coconut, add the potatoes, mix well, and at the end, add 2 tsps of lemon juice. Will taste awesome! But, this white podimas may not go with chapathies.
