Shahi Gobhi is a Mughalai dish, recipe source is Tarla Dalal , but it has been modified to be a healthier dish by omitting cream in it. But still, nothing lacks in this dish, and this is the first time I am making this, but my daughter has made this several times, so, according to her instructions I prepared this. I loved this, because, it tastes so different, totally different a gravy and different spices....I am sure, I am going to make this many a times, and each time, this wonderful recipe is going to steal the show!!! There is no doubt about it......
Ingredients
Cauliflowers - 2
Green peas - 2 cups
Onions - 1, sliced thinly
Tomatoes - 4, pureed
Curds / yogurt - 1 cup, whisked
Salt to taste
Coriander / cilantro leaves for garnishing
For the ground paste
Onion - 1
Chilli powder - 1 1/2 tsps
Turmeric powder - 1 tsp
Broken cashews - 3 tbsps
Cumin / jeera - 3 tsps
Cardamoms - 3
Cloves - 3
Bay leaves, broken - 2-3
Fresh coriander leaves - 1/2 cup
For seasoning
Cooking oil - 3 tbsps
Ghee - 3 tbsps
Ginger paste - 11/2 tsp
Garlic paste - 1 1/2 tsp
Cardamoms - 3
Cloves - 3
Bay leaves broken - 3-4

Serves 6-8
Cauliflower cleaned well, and chopped into florets
The unique ingredients which contribute to the flavor of the ground paste
The ground paste
tomato pureed
Cauliflower and green peas par boiled for 6 minutes in boiling water
Drained after 6 minutes
Cooking oil and ghee heated in a pan, sliced onions and ginger garlic paste are added
Bay leaves, cardamom and cloves are added too.
Add the ground paste after the onions turn golden
Flames on the lowest, keep sauteeing for 5 minutes, adding 1 tsp of brown sugar too, till the ground paste loses its raw flavor
add the tomato puree too and mix well
Now, add the well-whisked curds/yogurt
Add the par boiled cauliflower and green peas, add salt to taste
Mix well, allow to simmer for 5 minutes and switch off
Serve hot hot with any kind of parathas or rice varieties

Notes
* Please feel free to add fresh cream if you do not mind the calories it adds.
* Shahi aloo or Shahi vegetables can be prepared in the same way. Potatoes will replace Cauliflower for the first recipe, and mixed vegetables will , for the second one.
