Like the beautiful Rainbow on a cloudy, rainy day, this salad, made of fruits and vegetables, is a real treat in this sweltering heat. And also, like the 7 rainbow colors, this salad has 7 veggies and fruits all together.
Loaded with vitamins and minerals, this salad must be on your "definitely do" list.
The juicy oranges, carrots and beets, crunchy pomegranate arils, flavorful mint leaves and the tangy dressing ...all together, make this salad an interesting one.
Instead of eating hot rice, sambar or rasam to add to the misery of the scorching heat, it is good to eat such cool and crunchy salads in summer.

Ingredients
Sweet Orange (also called Kamala Orange) - 1, small, seeds and pith removed
Pomegranate arils - 1/2 cup
Grated beet root - 1/2 cup
Grated carrot - 1/2 cup
Chopped spinach leaves - 1/2 cup
Mint/pudina leaves - 1/2 cup
Tomato - chopped - 1
Green chilli - 1, slit
Organic brown sugar - 1 tsp
Salt to taste

For the dressing
Extra Virgin Olive Oil - 2 tbsps
Lemon juice - 2 tsps
Pepper powder - 2 tsps

All the fruits and veggies...(sorry, I forgot to keep the tomato)


All in the bowl



Chopped spinach added


Now, mint leaves and chopped tomato


Salt and sugar added..green chilli too..


All the above mentioned ingredients in the dressing


Dressing poured and....



mixed well


Serve with Hung Curd Sandwiches .  Refrigerate salad for an hour, and enjoy.
