Paneer Tikkas...............as far as I know, all love paneer tikkas. They are quite expensive in all restaurants. Here are step-by-step instructions and pictures to make these tasty tikkas at home itself. This recipe again, is from my daughter's kitchen....


Ingredients
Paneer - 1 packet (400 gms)
Cherry tomatoes - 1/2 box
Red bell pepper - 1, cubed
Green bell pepper - 1, cubed
Onion - 1, small, cubed
For the marinade
Hung  curds - 1 1/2 cups
Ginger paste - 1 tsp
Garlic paste - 1 tsp
Turmeric powder - 1 tsp
Besan - 2 tsps (this helps the paneer in not sticking to the foil)
Chilli powder - 2 tsps
Jeera powder - 2 tsps
Coriander powder - 2 tsps
Amchur powder - 1 tsp
Tandoori masala /tikka masala - 2 tsps
Crushed kasuri methi - 2 tsps
Lemon juice - 3 tsps
Salt to taste

Prep time & marinating time: 6-7 hours; Cooking time: 1 hour

Serves 6

We  must always use store bought thick curds or hung curds. It must be really thick with no water content in it. Put the curds/yogurt in a broad plate

All the above mentioned ingredients for marinade added here


and whisked to a creamy marinade


Paneer cubes , cherry tomatoes, red and green bell peppers and onions, all kept ready


Add the whole thing to the creamy curd marinade and gently toss them over with a flat spatula, taking care to coat each and every piece with the marinade. Cover with an aluminum foil and refrigerate for 6 hours, minimum. Overnight refrigerating is also very good. The full flavor of the marinade gets into each and every single cube


After nearly 8 hours of marination


All neatly stringed into the stainless steel skewers. Brush or spray some oil liberally over all the paneer cubes and veggies.  Bake in a pre-heated oven at 250 degrees C (400 degrees F), till the paneer cubes become golden brown in colour.


All turned gently after 12-15 minutes, again some more oil brushed over


Perfectly done. You must touch the paneer and make sure, they are spongy and yet golden brown. Do not over cook, then they will become rubbery





Serve the superb, soft yet golden,paneer tikkas with the Green Yogurt dip. You can either serve one skewer to each person , or gently remove them to a plate and serve.

Notes
* If you are using wooden skewers, you must dip them in water first, and then use. Also, later, you must smear a drop of oil over them and keep inside.
* These can be made on a tava too. Don't worry, if you don't have an oven. Sprinkle some oil over tava, roast paneer cubes and veggies to golden color and then string them to a tooth pick.
*Alternatively, you can string them first itself, then gently turn or rotate them and roast over a tava, drizzling a drop of oil around each, whenever needed.
*In case you do not have cherry tomatoes, then you can cube the regular tomatoes, take out the seed in them and then use.
