Here is a very healthy, nutrition-loaded recipe of my niece.....
sometime back, she told me that she made like this and gave me the idea.
Daughter suggested me addition of Carrots, which are rich in Vitamin "A".
So, for this Vinayaka Chathurthi,    I thought, I will offer to Lord Ganesha this new healthy and nutritious  variety of Kozhukkattai!!
For Plain Ammini Kozhukkattais, Just omit grated carrots and the boiled black eyed peas!!! That's all!!!


The other Kozhukkattai varieties: Modhakams, Ulundu kozhukkattai, Open urad kozhukkattai and ammini kozhukkattai.

Ingredients


Karamani/black eyed chick peas - 1/2 cup, soaked and pressure cooked
carrot - 1, small, grated
Green chillies - 3, pulsed
Salt to taste

To season
Coconut oil - 2 tsps
Cooking oil - 1 tsp
Hing powder - 1/2 tsp
Mustard seeds - 1 tsp
Urad dhal - 1 tsp
Red chillies - 2-3
Grated coconut - 2 tbsps
Curry leaves a few

Prep time: 15 mts; Cooking time: 25 mts

Yields 1 small bowl of kozhukkattais

Karamani, soaked in hot water for 3 hours, then pressure cooked for 6 whistles


Cooked karamani added to the Kozhukkattai dough


Crushed/pulsed green chillies, hing powder and salt added


Grated carrot also added


Everything kneaded together to a soft dough


Heat water in a steamer. On a greased steamer plate, keep the round, ball shaped amminis. These amminis will definitely be slightly bigger, since they have karamani inside most of them. Steam for 15 minutes


The steamed ammini kozhukkattais


In a non stick pan, add coconut and cooking oil, add the above mentioned seasonings

Add the cooked ammini kozhukkattais, after they cool down a bit. Add some more salt (if you think, it is necessary)


Mix well.
